BRB, eating my weight in pumpkin seeds. IS IT really fall if you don’t carve some pumpkins & make roasted pumpkin seeds? THE WHOLE scooping the guts out of the pumpkin part is fun if you like cold goop & it makes for the freshest pumpkin seeds. AND I couldn’t just choose ONE way to season them, so I made 3 batches, 3 different ways. WHICH pumpkin seed recipe would you follow?

ROASTED PUMPKIN SEED RECIPE

PUMPKIN SEEDS are pretty easy to make. FIRST get a couple large pumpkins & scoop out the seeds, separating them from the guts. THEN rinse the seeds & lay them out on the counter on paper towel to dry, about an hour or so. ONCE the seeds are dry, toss them with desired seasoning until evenly coated. PREHEAT the oven to 350°, line a baking sheet with parchment paper & spread out the seeds. I baked them for 10 minutes, then gave them a stir, then 5-10 more minutes, until crispy & light golden brown. LET COOL & enjoy. AND IF you’ve got some left over, store them in an airtight container for later, they stay crispy!

PUMPKIN SEED SEASONINGS

CLASSIC:

  • 1 CUP PUMPKIN SEEDS
  • 2 TEASPOONS OLIVE OIL
  • SALT & PEPPER (to taste)

SWEET & SPICY

  • 1 CUP PUMPKIN SEEDS
  • 2 TEASPOONS OLIVE OIL
  • LAWRY’S SEASONED SALT (to taste)
  • PINCH OF RED PEPPER FLAKES

CINNAMON SUGAR

  • 1/2 CUP PUMPKIN SEEDS
  • 1 TABLESPOON MELTED BUTTER
  • 1 TABLESPOON BROWN SUGAR
  • 1/2 TEASPOON CINAMMON

ROASTED PUMPKIN SEEDS

YOU can’t really go wrong with pumpkin seeds, but PERSONALLY my favorite are the sweet & spicy. ALTHOUGH the cinnamon sugar ones smelled UNREAL while they were in the oven, also salt & pepper is a classic. WHICH roasted pumpkin seeds would YOU make?
